Acorda Alentejana
Sharing an old favourite because the weathers turning and the nights are drawing in… so what better than a zingy soup to warm the cockles. This is based on a fantastic Portuguese soup called Acorda Alentejana, which is traditionally made with the water leftover from boiling salted cod. Here however I’ve used chicken stock, which is not traditional, but makes a fantastic dish.
This soup is so quick to put together and tastes absolutely fantastic, I highly recommend you give it a go. Coriander haters look away, this one’s not for you!
