Hainanese chicken rice

On these cold grey days, this is the kind of nourishing hearty food you want to be eating. It’s also a really simple recipe to make. Poach some chicken thighs with spring onion and ginger. Then use the resulting broth to cook some rice with lots of fried chicken skin, shallot and ginger. Combine the two and finish the dish with a clean sauce of mashed spring onion, ginger and garlic sizzled in oil to take the rawness away. Some chilli sauce wouldn’t go amiss. Honestly I could eat this every day! Chinese comfort food is about as good as it gets.
