Fig, tomato and mozzarella salad

A simple recipe inspired by the seasons making the most of stunning summer produce. Sweet, savoury, salty and zingy this is a great light lunch, quick to make and super refreshing with heaps of basil, used like a lettuce.

Make sure you hunt down some decent vinegar, no throat stripping stuff here, you want sweet and subtle acidity. Fig and tomato are such great friends, give this a try!
